INGREDIENTS
CAKE
- 1 2⁄3cups all-purpose flour
- 2⁄3cup cocoa powder
- 1 1⁄2teaspoons baking soda
- 1teaspoon salt
- 1⁄2cup shortening
- 1 1⁄2cups sugar
- 2eggs
- 1teaspoon vanilla
- 1 1⁄2cups buttermilk
FILLING
- 1⁄2cup kirsch
- 1⁄2cup unsalted butter
- 3cups icing sugar
- 1pinch salt
- 1⁄4cup espresso
- 1 1⁄2lbs fresh black cherries
ICING
- 2cups heavy whipping cream
- 1⁄2teaspoon vanilla
- 1⁄8cup kirsch
- 2tablespoons dry milk
- 2tablespoons icing sugar
- 1⁄2cup shaved dark chocolate
DIRECTIONS
- Pit most of the cherries leaving about 10 for decoration on top of the cake. Take the pitted cherries and soak them in a jar of the 1/2 cup Kirsch overnight.
- Preheat the oven to 350°F Line the bottom of three 9 inch round cake pans with parchment.
- Sift the dry cake ingredients together.
