GREEK LEMON RICE AND CHICKEN SOUP

INGREDIENTS

  • 2 Tbs EVOO (extra virgin olive oil)
  • 1 large Sweet Onion chopped
  • 3 cloves minced Garlic
  • 4 cups Chicken Broth
  • 1 Bay Leaf
  • ½ tsp Sea Salt
  • ½ tsp Black Pepper
  • 2 boneless skinless Chicken Breasts
  • ½ cup Arborio Rice
  • Juice from 1 Lemon
  • 3 Eggs
  • ¼ cup chopped fresh Dill Weed

INSTRUCTIONS

  1. In 6 Qt Dutch Oven add EVOO and Onion.
  2. Saute over med/high heat 5-6 min until Onions are translucent and softened.
  3. Add Garlic and saute 1 minutes.
  4. Add Chicken Broth, Bay Leaf, Salt, Pepper, and Chicken Breasts.
